The serious stuff:
The Cabernet Sauvignon for this wine was sourced from the three vineyards high on the slopes of the spectacular Ferguson Valley overlooking the Indian Ocean in the Geographe wine region of Western Australia.
Fruit from individual vineyard batches were picked in the cool of night prior to 3 days of cold soak and fermented separately between 19 -‐ 23 C for 8 days on skins to optimize flavours, colour and tannin profile, then pressed off to s/steel to complete primary and malolactic fermentation. The wine was then barrel aged for an additional 17 months in older French barriques, and then classified and blended prior to bottling.
But, what does it taste like?
Ripe, succulent and structured, with soft full tannins and a rich palette of dark fruits speed dating (you know the guys….blackberry, blueberry, mulberry, cassis et al…)
